Cheesy and Flavorful Snider's Healthy Taco Casserole
INGREDIENTS
- 1 lb ground beef
- 3 tbsp Snider’s Ancho Chili, divided
- 1 tbsp water
- 15 oz can black beans, drained and rinsed
- 15 oz can corn, drained
- 1 cup salsa of choice
- 2 bell peppers, diced
- ½ cup sour cream
- ½ cup plain greek yogurt
- 1 cup Mexican style cheese
INSTRUCTIONS
- Preheat oven to 350°F.
- In a skillet over medium to high heat brown ground beef, add 2 tbsp Snider’s Ancho Chili and your water.
- Once beef is browned add to a sprayed casserole dish.
- Combine all other ingredients besides cheese. Cover with foil and cook for 30 minutes.
- Take out of oven and add cheese.
- Cook uncovered for an additional 5 minutes.
- Serve by itself for or over rice
