Cheesy and Flavorful Snider's Healthy Taco Casserole

INGREDIENTS

  • 1 lb ground beef
  • 3 tbsp Snider’s Ancho Chili, divided
  • 1 tbsp water
  • 15 oz can black beans, drained and rinsed
  • 15 oz can corn, drained
  • 1 cup salsa of choice
  • 2 bell peppers, diced
  • ½ cup sour cream
  • ½ cup plain greek yogurt
  • 1 cup Mexican style cheese

 

INSTRUCTIONS

  • Preheat oven to 350°F.
  • In a skillet over medium to high heat brown ground beef, add 2 tbsp Snider’s Ancho Chili and your water.
  • Once beef is browned add to a sprayed casserole dish.
  • Combine all other ingredients besides cheese. Cover with foil and cook for 30 minutes.
  • Take out of oven and add cheese.
  • Cook uncovered for an additional 5 minutes.
  • Serve by itself for or over rice
